  • Springs’ Smoked Kingfish: crowned

    We always knew our Smoked Yellowtail Kingfish was a bit of a coup.

    Exclusive to Springs following a trip to Australia, the kingfish is indigenous to the clear waters of Spencer Gulf, off the southern coast, where the Antarctic currents are rich in nutrients.

    The matchless simplicity of kingfish is highly prized by master sushi chefs: the firm, almost sweet flakes are a sublime marriage of texture and flavour. So we knew we should do nothing more than cure it traditionally with dry salt, and then smoke it slowly over Sussex oak for a leisurely 24 hours.

    Result: 2 stars (so an official rating of “Outstanding”) For Springs’ Smoked Kingfish in the Great Taste Awards 2016.

  • Springs’ organic salmon meets higher accreditation rules

    Deliciously good news from our Scottish suppliers, where Springs’ organic salmon is reared in perfect conditions on the most remote island of the Orkney archipelago.

    The salmon that we select has just passed the tougher accreditation rules of the Soil Association, introduced last year.

    Their aquaculture standards go above (or should that be deeper?) than EU requirements, with an emphasis on the humane treatment of fish and the protection of the aquatic environment. All of which leaves an even better taste.

    Celebrations were in full flow last night, as the Sussex Food & Drink Awards marked its tenth birthday. Springs’ Smokery was named as one of the top three in our category – Sussex Food Producer of the Year.

    These awards are all about supporting and boosting local farmers, food and drink producers and the outlets which use and sell superb local fare. Starting from small beginnings, the awards have grown to become prestigious and respected, attracting over 10,000 votes from members of the public this year and huge support from business in the county, bringing together the whole local food and farming community.

  • GREAT TASTE AWARD

    The world’s most coveted blind-tasted food awards, Great Taste, has just released the Great Taste stars of 2015 and Springs’ Smokery is amongst the producers celebrating.

    Our Smoked Salmon is now able to proudly carry the little gold and black Great Taste logo.

    Judged by over 400 of the most demanding palates belonging to food critics, chefs, cooks, restaurateurs, producers and a host of food writers and journalists, Great Taste is widely acknowledged as the most respected food accreditation scheme for artisan and speciality food producers.

    When a product wears a Great Taste label it carries a badge of honour but more importantly, the Great Taste logo is a signpost to a wonderful tasting product – hundreds of judges have worked tirelessly to discover the very best, through hours and hours of blind-tasting a total of 10,000 different foods and drinks.
