    Deliciously good news from our Scottish suppliers, where Springs’ organic salmon is reared in perfect conditions on the most remote island of the Orkney archipelago.

    The salmon that we select has just passed the tougher accreditation rules of the Soil Association, introduced last year.

    Their aquaculture standards go above (or should that be deeper?) than EU requirements, with an emphasis on the humane treatment of fish and the protection of the aquatic environment. All of which leaves an even better taste.
